Easy Mediterranean Chicken Salad with Tzatziki

Healthy and tasty Greek Chicken Salad made with homemade tzatziki sauce in less than 20 minutes.

This easy Mediterranean Chicken Salad is one of my favorites when meal planning for the week. I can make it work for a few days without being in the kitchen every day.

Eating healthy doesn't have to be boring. This salad is packed with protein, it is low carb, and fits nicely into your daily calories. I often use this salad in my meal plan when counting calories or wanting to lose a few pounds, especially after the holidays.

Choosing Your Chicken

Well, this is what you prefer and the flavors you are looking for in your salad. Here are several options to consider.

Rotisserie chicken is a great, easy option. It is ready and fresh, just pull off the bone and add to the salad. I get my chicken from Costco.

Canned chicken breast is another simple option for this salad.

If you want to make this Greek salad a little fancier, grill some chicken. Breasts or thighs work great.

Ingredients Needed and Tips:

Chicken. Pick your chicken. Whether you need to save time and grab a rotisserie chicken or you want to grill some chicken for the week, it's what you prefer.

Cherry tomatoes. Little mini tomatoes will not release as much juice and will keep this salad fresh a little longer for you.

Cucumber. I prefer a seedless English cucumber in this recipe.

Kalamata Olives. Part of making this salad Greek is using kalamata olives. It gives a great fruity taste to the salad.

Parsley. In this recipe, I used fresh curly parsley. You can use the Italian parsley as well.

Red Onion. Giving more color to the salad and a milder onion taste. If all you have is white onion, just add less so that it doesn't overwhelm the salad.

Corn. Now this is not traditional to a Greek salad, but a little carbs to spice up the salad without overwhelming it is perfect. You can substitute with any other carb of your choice if you would like - pasta, rice quinoa.

Tzatziki Sauce. I have a really great recipe for a creamy Tzatziki Sauce that is made with Greek yogurt and fresh ingredients. If you are in a pinch, you can always grab ready-made sauce at the store.

How to Make the Salad

This salad is really easy to make, and it will literally take 20 minutes to put together. Detailed instructions are on the recipe card below.

Start with preparing chicken and sauce. If you are grilling your chicken, do this first. If you are making homemade sauce, prep ahead of time as well. This is where you customize your salad to your taste buds.

Then dice, chop, shred and slice all of the ingredients. Place them into a bowl and mix with your sauce.

Enjoy! It's that simple to make this salad and have an amazing, quick lunch or dinner.

How to Store

Greek Mediterranean Chicken Salad can be stored in the refrigerator for up to 3 days. Prepare enough salad for a few days, and store it in a container with a lid.

Ingredients

Scale

2 cups shredded, cubed chicken

1 cup cherry tomatoes. halved

1 cup cucumbers slice and cubed

½ cup red onions, diced

½ cup olives, pitted and halved

½ cup corn, canned or fresh

½ cup parsley, chopped

½ cup of tzatziki sauce

Instructions

  1. Choose your chicken—grilled, rotisserie, or canned—and prepare it. Once it's ready, chop it into small cubes or shred it.
  2. Make the tzatziki sauce or get your favorite store-bought version.
  3. Dice and chop all your ingredients—tomatoes, cucumbers, red onion, olives, parsley, and corn—and place them in a bowl.
  4. Add the chicken and the tzatziki sauce to the bowl and mix.
  5. Enjoy.
