Easy Creamy Cottage Cheese Buffalo Chicken Dip

Enjoy a healthier version of your favorite appetizer, buffalo chicken dip. This recipe combines cottage cheese with cream cheese to make a creamy dip without sacrificing the flavor you love in this game-day favorite.

Family favorite. Every time I tell my kiddos we are having buffalo chicken dip for dinner, I get a "YES!!!" response. It's delicious, and everyone looks forward to dinner.

Easy to Make. When I say easy, I mean it. My teenage daughter was able to make this recipe without my help.

Healthier. When making something healthier, the flavors must not be lost in ingredient swaps, and this one is balanced! It's more nutritious with a creamy texture that we all love, and it's still there.

Ingredients for Buffalo Chicken Dip

Chicken. Fresh-baked chicken breast is my choice of chicken in this recipe. But honestly, you can use any chicken you have on hand - rotisserie or canned will work just as well.

Cream Cheese. All the original recipes call for cream cheese for that creamy texture you love in buffalo chicken dip.

Cottage Cheese. I found that you don't need all of the cream cheese to make the creamiest dip. So, this is where cottage cheese comes in. An easy way to add more protein.

Ranch. If you are going to improve this recipe and make it healthier, get a quality ranch, with no ingredients that have a ton of additives. My favorite brand is the Primal Kitchen.

Hot Sauce. Get a quality buffalo sauce. Primal Kitchen also carries an excellent hot sauce to add to this buffalo chicken dip.

Cheddar Cheese. The best option is to shred a fresh block of cheddar, as preshredded cheese contains an anticaking agent. But if you are running short on time, shredded cheddar is your best friend.

How to Make Buffalo Chicken Dip

The delicious dip is so easy to make when all the ingredients are prepared. You literally add everything to one pan, bring it all together to melt and warm, and wala! Your dip is ready.

Here is another reason why you'll want to try this recipe. It doesn't need to be baked! The cheese melts on the hot dip, and you can serve it immediately.

What to Eat with Buffalo Chicken Dip

There are so many options for how to eat buffalo chicken dip, and here are some favorites:

Chips. Grab this awesome brand, Siesta Tortilla Chips.

Crackers. If you haven't tried Simple Mills Crackers, please do! Amazing flavor and no additives.

Veggies. I love an assortment of vegetables cut into long pieces to dip in the buffalo chicken dip - bell peppers, cucumbers, celery, carrots are some of my favorite choices.

Pretzels. Make soft pretzels or get the hard pretzels; both are fantastic!

Sourdough Bread. Nothing beats a fresh loaf of sourdough bread. Here is my rye sourdough bread recipe.

Wrap. Grab a tortilla, romaine lettuce and the dip. Great balanced meal!

Ingredients

1.5 lbs chicken breast

¾ cups buffalo sauce

8 oz cream cheese

8 oz cottage cheese

½ cup ranch

3 cups shredded cheddar cheese

Instructions

  1. If you are using rotisserie chicken or cooked chicken breast, shred it into small pieces.
  2. Shred the cheese if you are using a fresh block of cheddar.
  3. In a cast-iron pan on medium heat, add the chicken, buffalo sauce, and ranch, and mix until heated through.
  4. Add the cream cheese to the chicken and mix it up. It will start to soften and melt into the mix.
  5. Add the cottage cheese and mix.
  6. Distribute ¾ of the shredded cheddar cheese over the chicken and start incorporating, allowing the cheese to melt.
  7. Once the cheese has melted, turn the heat to low and sprinkle the remaining cheddar over the buffalo chicken dip, then let it heat for a few minutes.
  8. Enjoy!
