This easy chicken fritters recipe is simple to make, it's juicy, and a family favorite. It's high protein, low carb and a great way to meal prep for the week.

What are Chicken Fritters?

Chicken fritters are meat patties made with raw diced chicken, ground meat, or cooked chicken, formed into a patty, and fried in a pan for crispiness. They can be served straight from the pan, hot, with a side of mashed potatoes and coleslaw or as a cold meat patty with a slice of sourdough rye bread. A healthy protein option to grab for lunch the next day.

Easy to make. Dice up the chicken, mix the ingredients and pan fry! How easy is that?! You don't even need to fry them all at one time. Prepare a batch of fritter mixture and fry fresh chicken fritters daily for the next three days. Make them for breakfast with your eggs, lunch or dinner.

Ingredients Needed and Variations

Chicken. I really like using chicken thighs because of their juiciness, but any other cut of chicken will work just as well.

Greek yogurt. Whole-fat Greek yogurt adds the best flavor, but you can also use non-fat yogurt.

Whole wheat flour. Flour helps keep all the ingredients together with the eggs.

Parmesan Cheese. Honestly, you can use any cheese, such as cheddar, Gouda, or even Swiss, if you prefer. You can also increase or decrease the amount. I wanted to incorporate a balanced fat into my meat patties, so I added parmesan for its intense nutty flavor and low-fat content.

Ingredients

Scale

3 lbs chicken thighs

1 small onion

½ cup Parmesan cheese

½ cup Greek yogurt

3 eggs

3 tbsp whole wheat flour

2 tsp salt

1 tsp black pepper

1 tsp paprika

½ tsp garlic powder

Instructions

Step 1: Rinse and pat dry the chicken. Dice into cubes and set aside in a bowl.

Step 2: Dice the small onion into tiny cubes. The smaller, the better they will fry.

Step 3: Add the rest of the ingredients into the bowl and mix until all the ingredients are well combined.

Step 4: Preheat a pan with a drop of olive oil on medium heat. I prefer to use a cast iron frying pan - there's no need for oil on these pans if they're seasoned well.

Step 5: Add 2 tablespoons of meat mixture to the pan and create a thin patty by patting down the meat on the pan. Fry for 2-4 minutes on each side or until cooked through and the outside is crispy brown. Cook to an internal temperature of at least 165*F.

Step 6: Place onto a platter and allow to cool slightly.

Step 7: Enjoy with some mashed potatoes or rye bread.
