Mexican Quinoa Bowl (Easy and Tasty)

A Mexican quinoa bowl is made with a colorful spread of vegetables and pan-fried chicken. It's flavorful, healthy, and beautiful to eat.

Why You Will Love This Recipe

Healthy and Nutritious. This is a great balanced bowl packed with vitamins, minerals, protein, healthy amount of carbs and fat. All in one bowl!

Family-favorite. Not only is it healthy but the kids ask, "Mom, can you make me a bowl?" That means we have a winner of a meal for dinner on repeat in the house.

Great for meal planning. I love having this on the menu for the week. All the ingredients are stored in separate bowls and everyone can add to their bowl as much or as little of each item as they want and customize to their liking.

Ingredients Needed

Quinoa. This is an excellent source of fiber, protein, and iron. Cook with spices or just a dash of salt. It's easy to cook and very similar to rice.

Corn. Add a pop of color with corn. Use canned or frozen, whatever you have on hand.

Beans. You can use any canned beans you like. In this recipe, I used kidney beans, but you can also use pinto, black, or chickpeas.

Green Goddess Salsa. You are missing out if you haven't tried this green goddess salsa! It is packed with a ton of vitamins and antioxidants and made fresh. If you are short on time, grab fresh salsa from the grocery store. Also, consider the price, as this will not be budget-friendly, but a healthier option than canned store-bought salsa.

Chicken. I use chicken thighs, but chicken breast is great too. This is an excellent source of protein for this Mexican Quinoa Bowl.

How to Make the Quinoa Mexican Bowl

Step 1: Pan-fry the chicken. First, add spices on both sides of the chicken - cumin, salt. pepper, paprika and cayenne pepper. Add to pan and saute until cooked through. Add oil the pan as needed. I use a cast iron pan and do not need to add any oil.

Step 2: Cook the quinoa using the directions on the bag.

Step 3: Make the green goddess salsa or get fresh salsa from the local grocery store.

Step 4: Drain the kidney beans and canned corn, place them in a bowl or container, and set them aside.

Step 5: Assemble the bowl with all the ingredients (recipe card below) and enjoy.

This bowl can be enjoyed cold or warm.
