Fried Crispy Zucchini Bites

These fried crispy zucchini bites are a perfect snack for summer days when the zucchini harvest is plentiful. The outside of the zucchini is nice and crisp, while all the juicy flavors of the zucchini are locked in on the inside of these crisps.

I remember as a little girl, these fried zucchini bites were popular in our home. My mom would make them often and when she did, they didn't last long at all, often not making it to the dinner table, that's how good these cripsy bites are.

Tools Needed

Here are the key tools I use to make this recipe:

Cutting Board. Use your favorite cutting board.

Knife

Shallow Bowl. These salad bowls are great for dipping the zucchini in the egg and flour. The edges are not tall and shallow enough to dip and grab the zucchini out og the bowl.

Fork. I use a fork to turn the zucchini in the frying pan.

Cast Iron Frying Pan. The only frying pans I have in my home are cast iron. I used this 9 inch cast iron frying pan.

Ingredients Needed

Zucchini. Two medium to large zucchini from a local farm stand is perfect.

Flour. My go to flour is the King Arthur all purpose flour.

Garlic Powder. Brings a milder garlic flavor to a dish with sweet and earthy notes. This is a concentrated garlic flavor, so a little goes a long way.

Onion Powder. Brings a pungent onion taste that is not as sharp, with a slight sweet flavor and a hint of zest. It is a very concentrated flavor, so a little goes a long way.

Salt. Highlights all the flavors added to the recipe.

Ground Black Pepper. A sharp heat that typically enhances the flavor of any dish with citrusy and earthy notes. The coarser the grind, the more pronounced the flavor will be. The fresher the grind of the pepper, the more pronounced the flavors will be. 

Egg. Helps the flour to stick to the zucchini.

Olive oil. Fry the zucchini bites in oil. I use olive oil, but you can use your preferred oil.

How to Make The Recipe

These fried zucchini chips are so easy to make and a perfect snack for the family.

  1. Rinse the zucchini and pat dry.
  2. Slice into desired ring circles - slanted oval circles or round.
  3. Mix the flour, garlic powder, onion powder, ground black pepper and salt in one of the shallow bowls.
  4. Beat the egg with a fork or a mini whisk in another shallow bowl to combine egg white and yolk.
  5. Make an assembly line - sliced zucchini, mixed egg and flour mixture.
  6. Preheat the pan with 1 tablespoon of olive oil on medium.
  7. Using a fork or small tongs, dip the zucchini into the egg. Allow the excess to drip off before placing it into the flour bowl.
  8. Cover the zucchini in the flour mix, covering all sides. It is easier to scoop the flour on top of the zucchini.
  9. Add the coated zucchini circles into the pan as you coat them.
  10. Pan-fry zucchini circles until golden brown on both sides. Reduce the heat if the zucchini are frying too quickly.
  11. Once the zucchini is done frying, place them on a plate with paper towels or on a rack.
  12. Repeat until all zucchini circles are fried.
  13. Enjoy immediately or when cooled.

What to Serve with This Recipe

Easy zucchini bites can be a midday snack or part of a meal.

Growing up, my mom often made creamy mashed potatoes and a salad on the side. A favorite of mine is the cabbage cucumber salad.

How to Store Leftovers

I doubt you will have any left to store, as these are addicting. But just in case you do, place them in a container with a lid and store them in the refrigerator for 3-5 days.

I have never had a chance to freeze these, and I'm not sure I would recommend doing so.

How to Reheat Leftovers

To reheat zucchini bites - place into an airfyer at 375*F and reheat for 3 minutes or until slightly crisp on the outside.

Can you eat these cold? Oh yes! Still so tasty even straight from the refrigerator.
