Cabbage and Cucumber Salad with Dill

This easy green cabbage and sliced cucumber salad is budget-friendly and tasty, perfect for a crowd or family dinner.

This was a childhood favorite. My mom would make it often, and we would eat it by the plateful with a side of creamy mashed potatoes.

Cabbage and cucumber salad is easy to make, is budget-friendly, and uses real ingredients that can be easily found in any season.

This recipe makes about 20 servings, so this is perfect for a party and is definitely a crowd-pleaser.

Ingredients Needed

Green cabbage a fresh head of cabbage that looks crisp and no wilted leaves

English cucumber I love to use the English cucumber for its flavor. You can peel one strip and leave one strip of skin on. This will give a nice beautiful color of greens on the salad.

Fresh dill I love fresh dill! It smells so good and gives the salad a great taste of the dill herb.

Yellow Onion Use a fresh yellow onion or sweet yellow onion.

Sour cream I use regular sour cream, but you can use nonfat or lowfat to cut down the calories.

Salt In my house, we have been using Pink Himalayan salt, but fine sea salt will work just as well.

How to Make Cabbage Cucumber Salad

I love this mandoline slicer because it is multipurpose and has many attachments. This kitchen gadget can be used in many different ways. We will use the green board with the thinner slicing blade for this salad.

Slice the cabbage thinly on a mandoline slicer. I like to cut the cabbage into four wedges. I keep the butt of the cabbage on, so that the leaves stay in tact while slicing.

Slice the cucumber. Using the same mandoline slicer attachment, slice the cucumbers. Peel the cucumbers in a pattern, one strip peeled and one strip unpeeled. This will give the salad a beautiful pop of that deep green color.

Slice the onion. Using the same mandoline slicer attachment, slice the ¼ piece of onion. If you keep the butt of the onion on, it will help keep all the layers together and it will be easier to slice.

Chop the dill. About one bunch of dill will be enough for this recipe. I am also a huge dill lover, so the more, the merrier for my taste buds. Rinse the dill thoroughly, pat dry with paper towels, and chop finely.

Add mayonnaise, sour cream, and salt to a bowl and combine. I have a great recipe for homemade mayonnaise. It takes less than 5 minutes to make and is worth every minute of your time. Add that to the rest of the ingredients and mix well. I typically put on gloves and mix by hand. This is the easiest way I like to mix this salad.

How to Store Cucumber Cabbage Salad

This salad can be stored in the refrigerator in an airtight container for 3-5 days. It is perfect for meal planning or making ahead for parties.
