Ingredients Needed

Cold Butter. I use a good quality butter like Kerrygold. It provides a rich flavor to the scone.

Flour. All-purpose King Arthur Flour is my go-to. Unbleached, non-GMO, unbromated. None of the goodness is stripped from the wheat.

Sugar. I use organic cane sugar. The less processed, the better.

Egg. Keeping all the ingredients together.

Milk. I use whole milk in this recipe. I love all the creaminess and richness it provides to the flaky pumpkin scone.

Vanilla and Spices. I like to keep my fall pastries subtle on the spices, yet have a crisp fall flavor in every bite. Cinnamon, cardamom, nutmeg, and cloves are my go-to fall spices.

Baking Powder. This is a leavning agent that will help the scones rise and become flaky, soft and moist all at the same time.

Pumpkin Puree is the staple ingredient in this recipe. Get an organic pumpkin puree for a healthier, high-quality pastry.

Honey and Turbinado Sugar. A simple topping for this scone is all you need sometimes. Brush warm honey and sprinkle with turbinado sugar for a crunch.

How To Make Pumpkin Scones

With just a few steps, you can make your own delicious pumpkin scones.

Add all the dry ingredients into a bowl and mix together. Create well in the middle of the ingredients.

Add the egg, milk, vanilla, and pumpkin puree in the middle and whisk together.

Using a dough whisk, start incorporating all the ingredients together. Once the wet ingredients are mixed into the flour and are easier to handle with bare hands (not too wet), place the dough on a floured surface and finish combining the dough. Mix just until all the ingredients are combined.

DO NOT OVERMIX! Your scones will become tough if you mix too long. It is ok to have butter pieces in the dough. This will make the scones flaky.

Make the dough into a round ball and flatten into a one inch disc shape.

Slice the disc into 12 pieces, lay out on a half sheet pan with parchment paper.

Add just a few drops of water to the honey and heat for 5 seconds in the microwave. This will help to brush the honey easily on the scone.

Brush each scone with honey and sprinkle with turbinado sugar.

Bake the pumpkin scones in a preheated oven at 400°F for 20 minutes, or until slightly browned on the edges.

Ingredients

Scale

2 ½ cups all purpose flour

½ cup sugar

1 tbsp baking powder

½ tsp salt

½ tsp nutmeg

½ tsp cloves

½ tsp cardamom

½ tsp cinnamon

½ cup or 1 stick of butter

¼ cup milk

1 egg

1 cup pumpkin puree

Topping

2 tbsp turbinado sugar

2 tbsp honey

½-1 teaspoon water

Instructions

***Preheat oven to 400* F 

1. Combine all dry ingredients in a bowl and mix - flour, sugar, salt, baking powder, cinnamon, cardamom, cloves, nutmeg.

2. Create a well in the middle of the dry ingredients and add egg, milk, vanilla extract, and pumpkin puree. Whisk together all the wet ingredients. 

3. Start combining all the ingredients together. Use a dough whisk in the beginning. Once the wet ingredients have soaked up just enough of the flour, place the dough on a floured surface and continue to combine. 

DO NOT OVERMIX! Mix the dough just until all the ingredients come together. If the dough is overmixed, it will be a tough scone. 

4. Shape the dough into a round ball and flatten into about a one inch disc using your fingers. 

5. Slice the disc into 12 triangle pieces. 

6. Place the scone dough on a half sheet pan with parchment paper. 

7. Prepare the honey glaze by combing the water and honey. Heat for 5 -7 seconds in the microwave and mix. 

8. Brush each scone with the honey glaze and sprinkle generously with turbinado sugar. 

9. Bake in the oven for 20 minutes or until slightly browned on the corners. 

10. Enjoy with your favorite beverage.
