Easy to Make! Greek yogurt protein pancakes are quick and easy to make. The batter comes together in less than 5 minutes. Breakfast is ready in under 15 minutes. from start to finish.

Ingredients Needed

Eggs. This will help bind all the ingredients together, add protein and the yolk will serve as the tasty fat part of the pancake.

Greek Yogurt. The creaminess and protein added with Greek yogurt.

Whole Wheat Flour. This is another way to add protein into pancakes along with fiber and Vitamin B.

Oat Flour. Just like whole wheat flour, oat flour is a great source of fiber and protein.

Coconut Sugar. If you have never tried coconut sugar, you are missing out. This is my new sweetener in the house. The depth of flavor is absolutely delicious!

Baking Soda. The levaning agent to make fluffy pancakes.

How to Make Protein Pancakes

This is the step by step guide to making these deliciously irresistible fluffy protein pancakes.

Step 1. Add one whole egg, two egg whites, and Greek yogurt to a bowl. Whisk together until combined.

Step 2. Add all the dry ingredients into the bowl. Whisk together until combines.

Step 3. Preheat a pan on medium low heat. Spray cooking oil as needed.

Step 4. Add batter to the preheated pan and allow the pancake to cook until little bubbles start forming on the top. Flip the pancake and finish cooking.

Step 5. Place on a platter and serve with fresh fruits and maple syrup.

Variations or Substitutes

  • Use any Greek Yogurt of your choice. I use Cabot whole milk Greek Yogurt as it has a mild sournessn with a creamy and velvety texture.
  • Add any fruit of your choice. I like to use frozen berries. Once the berries are warmed, they release a sweet juice serving as the syrup and no extra sugar needs to be added.
  • Substitute the coconut sugar to any choice of sugar.
