What Is the Best Way to Cook Beets?
Red beets are cooked several different ways. Steaming, oven roasting and even boiling. After trying all these methods, my favorite one is oven roasting.
Step 1: Preheat the oven to 400*F.
Step 2: Cut off the leaves and the root end of the beets. Wash them thoroughly, pat dry and place into a casserole dish. Cover the beets in the dish with foil.

Step 3: Place the beets in the oven for 45-60 minutes or until tender. If the knife slides through the beets easily, they are done cooking.

Step 4: Cool the beets and store in the refrigerator.
Do I need to peel beets before roasting?
No. Leave the skin on the red beets. Once done roasting, it is easier to peel; the skin slides right off.

How to Store
Beets are stored well in the refrigerator in a plastic container or ziploc bag for up to one week.
