This green salad is very refreshing and can be made using garden-fresh ingredients. Add it to any dinner or lunch to lighten up the flavors on the table.

I love adding a fresh green salad to any dinner, especially with juicy meat like the Country Pork Ribs. My mom always paired ribs with a classic green salad and creamy mashed potatoes on the side. Every Sunday was a tradition at Mom's house for this yummy meal waiting for us to enjoy.

This salad is so easy to put together. If you like planting a garden in the summer, these vegetables are great to grow and can be used in many ways, like this salad recipe. It gives freshness to each meal, is rich in fiber, and the entire family loves it.

Ingredient Variations and Substitutions

Honestly, all vegetables in this salad are can be substituted to your liking. Here are some things I have tried:

Add Avocado. I love avocado so I add one if I have it on hand.

Bell Peppers. Add a little extra crunch and color with a bell pepper.

Green onions. If you don't have any red onions, substitute with green onions. Chop into small pieces and add to your liking.

Parsley substitutions. I have added fresh dill and cilantro. Both add a different twist and are so good.

Add protein. Toss some chicken, chickpeas or ground meat to make this a salad bowl.

Dressing. The simplest is olive oil and salt. I add a little flavored balsamic from my local grocery store. Add some vinegar or lemon juice to give it a little tang.

How to Store

First off, the best thing is to enjoy this salad fresh. Second day salad is not as fresh. But if you did have any leftovers, place into a plastic container with a lid and add keep in the refrigerator for no more than 1-2 days.

Preparing this salad ahead of time is possible and storing all the ingredients separately is another great way to store the salad. Dice and slice all the ingredients and have it ready to toss together when needed.

Ingredients

Scale
  • 1 cup Arugula and Spinach Mix
  • 2 cups cucumbers, diced
  • 1 cup cherry tomatoes, sliced in half
  • ¼ cup red onion, sliced
  • ¼ cup parsley, chopped
  • 1 tbs olive oil
  • 1 tsp garlic balsamic
  • Salt to taste

Instructions

Step 1 Prepare all ingredients - chop parsley, slice onions and cucumbers, half the cherry tomatoes. Add into a bowl and toss together.

Step 2 Add olive oil, balsamic of your choice and salt. Mix the salad together.

Step 3 Serve with your favorite meat and carb of choice.
