Ingredients Needed
Most cheesecake recipes call for cream cheese. After conducting extensive research and learning about the ingredients in cream cheese, I quickly realized that a swap was necessary. So, I set out to make a cheesecake that would not only satisfy my cravings but also nourish my body along the way with the ingredients in it. So here is what I did instead:

Simple Mills Sweet Thins. Swap graham crackers for these sweet thins. They are much healthier, using only quality ingredients to make their crackers healthy and tasty.
Butter. Use butter with the sweet thins to make the crust.
Cottage cheese, whole-fat Greek yogurt, and whole milk. Instead of cream cheese, I use these three ingredients to make this homemade cheesecake creamy and fluffy once baked.
Eggs. A binding ingredient that also gives a great flavor to any baked good.
Maple Syrup. No better way than sweetening your dessert with the most natural sweeteners out there and in this recipe I used maple syrup. And the cool part? Only ⅓ cup for the entire recipe!
Flour. Use a quality all purpose flour to make this cheesecake healthier. My favorite one I keep stalked in the pantry is King Arthur all purpose flour. No weird thickeners, just one simple ingredient.
Lemon Juice and Vanilla Extract. Deepen the flavor with vanilla extract and add a touch of tang with fresh lemon juice. Perfection!
How to Make Healthier Cheesecake
There are two main steps to making this healthy cheesecake.
Step 1: Make the crust. Place all the cookies into a ziploc bag and crush using a kitchen hammer. Mix with melted butter and pat down on the bottom of the pan.
Step 2: Place all the ingredients in a blender and blend until you achieve a smooth batter. Pour into the pan and bake until done.

Tips and FAQs
Can I cut the cheesecake right away? Typically, you must chill the cake in the refrigerator for at least 6 hours. As I was impatient and I wanted to have the dessert for dinner, I decided to slice into it only a few hours later. It was softer, but stayed intact. So, the correct answer is to wait until the next day. But if you are impatient like me, give it 2-3 hours before digging into the cheesecake. I don't guarantee it won't be droopy, so proceed at your own risk.
Do I need to use a water bath to bake this cheesecake? I do not use a water bath to bake this cake. Yes, mine did have a crack, but nothing strawberries can't fix. 😉
For the perfect slice, wet your knife before cutting into the cheesecake to achieve the cleanest lines.

Ingredients
36-42 sweet thin crackers
⅓ cup butter
1 ½ cups cottage cheese
1 ½ cups Greek yogurt
1 cup milk
2 eggs
⅓ cup maple syrup
1-2 teaspoon lemon juice
Instructions
Preaheat the oven to 350*F
To Make The Crust:
1. Place the Simple Mills sweet thins into a gallon-size ziploc bag and crush the cookies until they are tiny crumbs. Place into a bowl and mix with melted butter. Set aside.
To Make The Cheesecake Batter:
1. Place all the ingredients into the blender - cottage cheese, Greek yogurt, milk, eggs, maple syrup, vanilla extract, lemon juice and flour.
2. Blend the ingredients until thoroughly combined. I stop the blender a few times to scrape down the sides as necessary.
Put It Together and Bake:
1. Place the spring form pan with the crust on a sheet pan. This will help catch any butter that might melt or batter that may leak through the cracks.
2. Pour the batter on the crust. Place into the oven and bake for 1 hour.
3. If the cheesecake moves slightly but is not wet in the middle, then it is done baking. If the cake is still liquidy in the middle, bake for an extra 15 minutes.
4. Cool the cheesecake on the table for 2-3 hours. Place into the refrigerator for at least 6 hours or overnight and allow to set completely.
5. Enjoy the next day once chilled.
