Oven-roasted red beets are easy to make and a delicious way to add good nutrition to your plate.

  • 6 medium-sized red beets

Instructions

Step 1: Preheat the oven to 400°F.

Step 2: Cut off the leaves and the root end of the beets. Wash them thoroughly, pat dry and place into a casserole dish. Cover the beets in the dish with foil.

Step 3: Place into the oven for 45-60 minutes or until tender. If a knife slides through the beet easily, they are done cooking.

Step 4: Cool the beets and store in the refrigerator.

Notes

  • Leave the skin on the red beets. It is easier to peel once they are roasted. The skin slides right off.
