This easy green cabbage and sliced cucumber salad is budget-friendly and tasty, perfect for a crowd or family dinner.

Ingredients

2.5 lbs Whole Cabbage, sliced

1 English Cucumber, sliced

1/2 cup fresh dill, chopped

1/2 cup yellow onion, sliced

1/4 cup mayonnaise

1/4 cup sour cream

1 tbsp salt

Instructions

  1. Slice the cabbage thinly on a mandoline slicer. Cut the cabbage into four wedges. Keep the butt of the cabbage on, so that the leaves stay in tact while slicing.
  2. Slice the cucumber. Using the same mandoline slicer attachment, slice the cucumbers. Peel the cucumbers in a pattern, one strip peeled and one strip unpeeled. 
  3. Slice the onion. Using the same mandoline slicer attachment, slice the 1/4 piece of onion. If you keep the butt of the onion on, it will help keep all the layers together and it will be easier to slice.
  4. Chop the dill. About one bunch of dill will be enough for this recipe. Rinse the dill thoroughly, pat dry with paper towels, and chop finely.
  5. Add mayonnaise, sour cream, and salt to a bowl and mix. Add that to the rest of the ingredients and mix well.
